I recently baked a cake for my brother-in-law's early 50th birthday. I wasn't quite sure what type of cake to make as it needed to be gluten free, so I adjusted one of my favourite chocolate cake recipes and it turned out great!
I doubled the recipe below to make a 3 tiered cake filled with vanilla butter cream, iced with chocolate butter cream icing and decorated it with fresh berries and white chocolate shavings!
Here's my modified recipe, enjoy!
Gluten Free Chocolate Cake
Preheat oven to 180 degC
Ingredients
1½ cups gluten free baking mix or gluten free flour
1 cup sugar
½ cup cocoa powder
1½ tsp baking soda
1 tsp salt
1½ cups milk
100g butter, melted
2 eggs
1 tsp vanilla
Mix all the ingredients together in a mixer and pour into a greased and lined 20cm cake tin and bake for approximately 50 minutes.
Once cooked, ice with frosting and decorate!
