Banana Fritters - aka "the frazzled mum meal", or the "what in the world am I going to do with all of those brown bananas" solution, and the list could go on. These fritters are delicious, reasonably healthy, easy to make and everyone's best friend.
So here is the how to for Banana Fritters (feeds approximately two people, and you can double/triple the recipe accordingly, depending on the size of your troop):
Beat 2 eggs and 1 dessert spoon of sugar together.
Add ½ cup milk. Mix in ½ cup flour (I used wholemeal flour) and ½ teaspoon baking powder.
Mix with a fork.
Stir in 2 mashed bananas.
Fry in butter until golden brown (can add grated apple and/or spices for that something extra).
Delicious served with custard, ice cream, whipped cream or drizzled in golden syrup.
That's it!
