I wholeheartedly believe that no matter what is happening
in your life, there is always something that you can be thankful for... no matter how simple it is.

I realise after yesterdays post, that some of you would have struggled to understand what my sweet 5 year old was trying to write, so just for you, here is the original clip, along with her own version of the song (while in dressing gown with Boo trailing after her).
This song has almost been our family theme song this year (just for fun), and despite what life throws our way, we've just got to keep on moving, or as my darling daughter writes, "I got to keep on mooveing".
On Friday the hubs and I went on a much needed road trip to Hamilton.
It was soooooo good to spend quality time together, relax, laugh and be refreshed. I won't talk about the fact that we got lost twice... even while using the GPS for directions.
I will talk about the delicious macaron sampling that went on...
I will also show you this photo of my bag of sugared almonds, just to make you drool...
I loved the fact that Hamilton reminded me a bit of our home town Whangarei... it was probably the guy sitting next to us at the movies wearing socks and jandals that did it.
And finding notes like this written by my darling 5 year old (she is obsessed with the song after seeing this advertisement)...
Yep, it was a great weekend!!!

I love cooking with dates... date scones, date loaf and best of all, sticky date pudding!
This is such an easy recipe, and the date pudding is firm, delicious and can be served in many ways... with butterscotch sauce, custard, cream (pouring or whipped), icecream etc.
Enjoy!!
Ingredients
1 1/4 cups pitted dates, chopped
1 1/4 cups boiling water
1 tsp baking soda
60g butter, chopped
3/4 cup soft brown or dark cane sugar
2 eggs
1 cup self-raising flour
Butterscotch Sauce
2 cups soft brown or dark cane sugar
250ml cream
50g butter
1 tsp vanilla essence
Method
Preheat oven to 180°C. Grease deep 20cm round cake tin, line base with baking paper.
Combine dates, boiling water and soda in bowl. Stand for 5 minutes. Blend or process date mixture with butter and sugar until almost smooth, add eggs and flour, mixing until just combined. Pour mixture into prepared pan.
Bake 45 – 50 minutes or until cooked through. Cover with foil during baking if over browning. Stand pudding 10 minutes before turning out of pan. Serve with Butterscotch sauce poured over the top.
Sauce
Combine all ingredients in medium pan, stir over low heat until sugar is dissolved and butter melted.

There has been a bit of creating going on in the last week or so, mainly a few cellphone covers, a popcorn stitch beanie for a very special lady, and the continuing saga of hubby's blanket.
I'm loving the colours, and especially loving doing the black edges once I've done a dozen or so of the squares...

Joining in with Our Creative Spaces
We are nearing the middle of two weeks of school holidays, and I'm still searching for my burst of motherhood inspiration.
Creativity has been at it's all time low lately, biscuits baked have either been flat or burnt, and promises of fun play dates and trips have been cut short by sickness or bad weather.
Yup, the motherhood blues have been hitting me hard as I struggle to assure myself that's it's okay to just do nothing sometimes... that these seasons do come... and they do go.
This year has been a tough one, with various painful moments to journey through... sometimes there doesn't seem to be a moment to catch a breath before another struggle arises. But the strange thing is that in the midst of the struggles there has also been amazing moments too, some of them brought about by the banding together of the family during the tough times.
Struggles are the best way to grow stronger, just like pressure builds muscles.
So I'm just taking a moment to be real and honest here (in a very 'round a bout' way)... although the biscuits are flat or burned and there hasn't been much going on around here, we are doing it together as a family, even during the dull and boring moments, with the knowledge that the sun will shine again up ahead (and the baking will be more successful too).
Also loving the fact (and I know it's a fact that I can totally rely on) that God makes beautiful things out of dust, beautiful things out of us...

Lastly, loving being shouted out to Fat Camel by a very precious couple. We felt so spoiled, and it was extra awesome reliving our Israel experience, which was nearly 2 years ago exactly!
