I'm all for quick and simple recipes, including great microwave ones as well.
There are a heap of great chocolate pudding recipes out there, but when it comes to quick ones with simple ingredients that I always have in my pantry, this is my favourite!
Always extra delicious with chocolate chips sprinkled over the top when warm out of the microwave, and served with whipped cream or icecream (or both!).
Ingredients
2 tablespoon butter
1 cup flour
2 teaspoons baking powder
½ cup white sugar
2 tablespoons cocoa
½ cup milk
1 teaspoon vanilla
Sauce
¾ cup brown sugar
1 tablespoon cocoa
1¼ cup water (a little more never hurts)
Put butter in a small bowl. Cook on high in microwave for 40 seconds.
Sift flour, baking powder, white sugar, cocoa into mixing bowl.
Whisk in the milk, vanilla, and melted butter. Mix well.
Spread in a 20cm square baking dish (I often use a round one!)
Sauce
Mix brown sugar, cocoa and water in a bowl.
Pour it over the pudding. DON'T STIR IT!
Cover dish loosely with wax paper.
Cook on high 10 minutes. Stand for 10 minutes and serve.
