I have a favourite quiche recipe (see here), but when I'm in a rush or just feel like throwing something easy together for tea, this quiche is my "go to" dish. I love how simple it is to make, and how practically anything can be thrown in (especially great for using up leftovers).
I can't remember where the recipe originates from (it's one my Mum handed down to me) but it's a goodie and easily can be doubled if needed.
Ingredients
1 medium onion, chopped
Other chopped ingredients: pepper, tomato, ham or bacon, silverbeet, corn etc
1 cup grated cheese (tasty cheese is best)
2 eggs, beaten
1 cup milk (or cream if you feel naughty)
¾ cup flour
1 teaspoon baking powder
Method
Mix all of the vegetables and wet ingredients together, then add the flour and baking powder.
Put all together in to a greased dish and cook for ¾ hour at 180°C.
That's it! So yummy.
