I wholeheartedly believe that no matter what is happening in your life, there is always something that you can be thankful for... no matter how simple it is.  

Here are a few of the things I am loving at the moment...

Really loving finding black and white jelly beans.  I think they are in celebration of the All Blacks, but they are also my two favourite jelly bean flavours!!


Loving thoughtful surprises from an amazing sis-in-law (thanks Shells xoxo)...


Loving mixing up delicious desserts...


Loved realising that last Tuesday was the 1 year anniversary since Boo arrived!!  We love her to bits and seriously think she is the best dog ever (even though she is a wee bit chubby and needs steroids for her grass allergy).  My favourite post about Boo would have to be this one.  Still cracks me up!!

Loving making a few more mustard crochet coasters...

Honey Ricebubble Slice is a traditional Kiwi (New Zealander) sweet treat!  I even remember my Mum making this when I was young.  

The recipe is super simple, and for fun you can zhuzh it up a bit by adding extra ingredients to the mix.  Things like coconut, chopped apricots and marshmallows are delicious!!

Ingredients

125g butter

½ cup of sugar

2 tablespoons of honey

4 cups rice bubbles (popped rice breakfast cereal that is just plain – no coatings or flavouring)

Grease a swiss roll tin and have a large bowl with the ricebubbles in it all ready

Mix up honey and sugar and butter into a pot with a solid base and melt – simmer as if making toffee for about 5 min – depending on how crunchy you like it, somewhere between soft ball and hard ball stage

Now, working really quickly (as it will start to set in the bowl), pour the honey toffee mix over the ricebubbles, mix through as well and as fast as you can and pour into greased tin and push down til its about an inch or so thick and firm together and leave to set.

Cut into squares to serve!

Like every week, this week has had it's ups and downs, including the odd disappointment, coughs and colds, husband's lost wallet and the dog spewing on our bed.  But like I say, there is always something to be thankful for.

Scarecrows - just because...


Loving this fabulous idea (via Jacksta, via Dee) of having a secret journal with my oldest daughter, where we share whatever we want to with each other, then hide it under each other's pillows. LOVING it!!


Loving Poppa's measuring stick... loving seeing how tall each of our children are getting (but scary seeing that my eldest boy is nearly the same height as me!!!).


Cafe's that provide things for children to do rock!  Really appreciate when businesses think about the busy parent and their child.


Finally, loving this.  The couple on this are soooo cute and I do hope Symon and I will be like this when we grow older (although hopefully we will be a bit more computer savvy!).

Finding this cute retro camera at our local Artisan markets last week...


Loving the excitement in our city of Whangarei on Wednesday, as we hosted one of the Rugby World Cup matches (between Tonga & Canada).  Talk about a sea of red and white everywhere! We also even had our very own Flash Mob Haka (Ngapuhi Haka) in the middle of town...
