I love Biscotti! It's tasty, crunchy, reasonably healthy (having no butter or oil in it), and rather posh as well (because we all know that fancy cafés have Biscotti for sale!).
You know you're onto a good Biscotti recipe when you taste it during a Playcentre meeting, comment on how delicious it is, and end up coming home carrying a copy of the recipe because the lady that made it knew the recipe off by heart because she makes it so often!!
Now I've made a fair few Biscotti recipes in my time, and to be frank, they haven't all turned out that great. I've shared the Banana Biscotti recipe here before because I loved that, but just had to share this one too!
I've already made it twice this week - one with chocolate chips in and another with apricots and walnuts. Love the fact that it's easy and lasts for ages in an air tight container.
Ingredients
275g plain flour
1 teaspoon baking powder
125g sugar
2 large eggs plus 1 egg yolk
Extra items for filling i.e. chocolate chips, nuts or dried fruit etc.
Mix the dry ingredients in a large bowl then add the eggs and mix. Add your choice of extra filling i.e. grated rind of an orange, 50g chocolate chips, sliced nuts, apricots etc.
Mix well with your hands until all ingredients are combined. Put on a floured work surface and knead for 1 minute.
Cut in half and shape both into long rectangles, making as uniform as possible.
Bake for 25 minutes then take out, slice into 5 mm slices and lie flat on tray. Bake again for another 10-14 minutes.

I'm gonna make this for our next Playcentre meeting! It beats the packet of chocolate biscuits I normally pick up on the way! LOL
