Oh Donut Muffins,
You are the cheese to my cracker,
The peanut to my butter,
The milky to my way,
And the syrup to my waffles.
Yes, as you can probably tell, I do love these tasty morsels. Big thanks to Meghan who mentioned these delicious treats on her blog yesterday. I just had to try making them and they are seriously delicious!!
Donut Muffins
Ingredients for the muffins
1 3/4 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/3 cup oil
3/4 cup sugar
1 egg
3/4 cup milk
For the coating
1/4 -1/2 cup butter, melted
1/3 cup sugar
1 tablespoon cinnamon
Directions
Preheat oven to 180 degrees and grease a muffin tin.
Combine flour, baking powder, salt, nutmeg and cinnamon in a medium bowl.
Combine oil, sugar, egg and milk in a large bowl. Add dry ingredients and stir only to combine.
Bake at 180 degrees for 15-20 minutes. While muffins are baking, melt butter in a small bowl. In another small bowl, combine the sugar and cinnamon.
Shake muffins out of the muffin tin while the muffins are still hot.
Dip muffins in the melted butter and then into the sugar and cinnamon mixture. Place on a wire rack and allow to cool.

ReplyDeleteThese look and sound just like teh Pioneer Woman's French Breakfast Pastry Puffs. They ARE amazing! Her batch makes huge ones...and a platter-full at a time. Dangerous for the waistline for sure:)

ReplyDeleteOh I loooove cinnamon and sugar! Must try these. How do you stay your lovely size while continuously turning out such tasty little morsels? Must have something to do with the other tasty little morsels you turned out that live in your house! Lol.
ReplyDeleteI made these tonight. I made full muffin size and minis. Mini's are DEF better, extra crunch, extra sugar/cinnamon and each time you walk passed the bench you can just pop one of those suckers in your mouth. I started with 12 mini muffins and 6 large muffins. I currently have 4 mini muffins and 6 large muffins. Look what you've done...I blame you a little bit hahah.

ReplyDeleteyum yum yum! I first saw these on Meghan's blog so when you posted them too, I took it at as a sign to get baking!! I made them this morning for lunchboxes and I had the extra naughty idea to pop a chocolate button inside them before they went in the oven - oh....my....word they are GOOD!
