We currently have feijoas coming out of our ears, thanks to our neighbours generous feijoa tree that hangs over our driveway. I love feijoas and anything feijoa related (you wouldn't believe how addicted I was to feijoa juice when pregnant with our youngest!).
When I saw (and couldn't stop drooling over) BobbyRobin's Yummy Feijoa Loaf last week, I just had to make it... and then went on a 'feijoa recipe hunt'.
That's when I found these delicious babies - and I love the fact that this recipe is so easy to whip up (and devour). Check out the other great recipes on this Kiwi Wiki site too - Kiwiana heaven!!
Easy Feijoa muffins
1 cup chopped feijoa
75 gm butter
2 eggs
¾ cup sugar
2 tsp baking powder
2 cups flour
milk to mix (or fresh lemon or orange juice)
Topping
1 tsp cinnamon
1 Tblspn sugar
Cut feijoas in half and scoop out flesh with a spoon and overfill a cup. Cut feijoa flesh into pieces so cup is packed. Melt butter in a bowl add feijoa and stir. Add unbeaten eggs and combine. Fold in dry ingredients, add liquid to achieve a soft consistency. Spoon into muffin pans. Mix cinnamon and sugar topping and sprinkle over muffins.
Bake in 200° for 10 to 15 minutes.
Makes 12 standard, or 24 mini muffins

ReplyDeletei need some of those muffins. that word was NEED. And I don't usually pay attention when people cook, because I am so bad at it, and I get jealous. you are a feijoa legend! (those babies are ike $6.99 a kg in the supermarket.... soooo wish I could inherit neighbours with a feijoa tree)
I love feijoas too - ransacked my grans tree over the weekend in New Plymouth. And she made yummy feijoa muffins too - am thinking I ate way too many though :-)

ReplyDeleteThanks Kristy! I have just popped a mix in the oven. I was looking for something to bake for a morning tea tomorrow and this was so quick and easy! I didn't have any ripe feijoas so I used grated pear. I'll let you know how it turns out!
