I love peanut butter - and what could be better than tasty, crunchy peanut butter biscuits! Adding chocolate chips to this recipe would make them amazing!
But I must warn you... if you or a family member have an allergy to peanuts, do not make these (even though they look real good).
Ingredients
125g (4oz) butter
½ teaspoon vanilla
½ teaspoon grated lemon rind
⅓ cup sugar
⅓ cup brown sugar, lightly packed
⅓ peanut butter
1¼ cups plain flour
1 teaspoon bicarbonate of soda
pinch salt
Cream butter, vanilla, lemon rind, sugars and peanut butter. With a wooden spoon work in sifted flour, soda and salt, making a stiff dough. Roll heaped teaspoonfuls into small balls with floured hands and place on greased oven trays. Press biscuits down lightly with a fork, first crosswise and then lengthwise, for a crinkled effect. Bake in moderate oven for 15 minutes. Cool biscuits on oven trays.
Makes about 25. Enjoy!!

ReplyDeleteI used to make peanut butter slice with choc icing from a slice recipe book I have - it was yum - but I stopped as Monk is/was allergic and it was only me eating it.
