There's nothing like a nice piece of warm, heavy, apple and berry cake, topped off with a dollop of whipped cream or ice cream. I've been looking for a really nice recipe for ages, and I think I've found a keeper.
Ingredients
1/3 cup self-raising flour
1/3 cup self-raising flour
40g unsalted butter
1 tablespoon caster sugar
2 tablespoons flaked almonds
2 Granny Smith apples
Extra 180g unsalted butter
1¼ cups raw sugar
1 tablespoon rum essence
3 eggs
Extra 2½ cups self-raising flour, sifted
¾ cup buttermilk (if you don't have any, use normal milk)
300g frozen mixed berries
Icing sugar, for dusting
Method
Preheat oven to 180°C. Grease and line a 23cm diameter springform tin with baking paper. Put flour in a bowl and, using fingertips, rub in butter until mixture resembles breadcrumbs. Stir caster sugar and almonds. Set crumble aside. Peel, quarter, core and thinly slice apples.
Using electric beaters, beat extra butter, raw sugar and essence until light and creamy. Add eggs, 1 at a time, beating after each addition. Stir in extra flour and buttermilk until just combined.
Spread half the mixture over base of prepared tin. Cover with half the apples and berries, spoon remaining mixture on top and smooth. Top with remaining fruit. Sprinkle over crumble.
Bake for 1-1¼ hours or until a skewer comes out clean when inserted into the centre. Stand for 10 minutes, turn out and cool on a wire rack. Serve warm or cold, dusted with icing sugar.
