Peanut brownies are great - especially if you don't have a peanut allergy.
I've never made them before, so decided to give them a go with Miss 2 as my special helper (which means she sat and watched, helped de-husk the peanuts and licked the beaters when I'd finished).

Peanut Brownies
125g butter, softened
1 cup sugar
1 egg
1½ cups plain flour
1 teaspoon baking powder
pinch of salt
2 tablespoons cocoa
1 cup peanuts, roasted and husked (I microwaved mine for a few minutes instead)
Cream butter and sugar until light and fluffy. Add egg and beat well. Sift flour, baking powder, salt and cocoa together. Mix into creamed mixture.
Add cold peanuts and mix well. Roll tablespoonful of mixture into balls. Place on greased oven trays. Flatten with a floured fork. Bake at 180°C for 15 minutes or until cooked.
Makes 20.

ha been making these fool-proof cookies for years!! one of my favs. can't believe you've never made them before K :) i usually add choc chips in mine too - makes them more moist
