My lovely Nana gave me this recipe last week and was raving about it... and rightly so. This is one recipe you just have to try as it is sooooo yummy. It is from Jo Seagar's book "Sugar & Spice".
Coffee Date Fingers
1 cup soft brown sugar
175g melted butter
½ cup milk
1 tab sweet coffee essence (I used the tinned instant coffee and milk instead)
1 cup finely chopped dates
1½ cup flour
2 tsp baking powder
Beat eggs, add remaining ingredients and mix well until thoroughly combined.
Spread into a well greased or baking paper lined 9" (22cm) cake tin.
Bake for 30 minutes at 150°C (I left mine in a little longer).
Cool in tray.
Ice with coffee icing and cut into fingers or squares.
Coffee Icing
2 cups icing sugar
25g melted butter
1 tablespoon sweetened coffee essence
boiling water
Mix all ingredients together, adding enough boiling water until a smooth spreadable icing forms.
Enjoy!

ReplyDeleteHi there - just made this recipe and am pretty sure its meant to be 1 1/2 cups of flour. Mixture tastes yummy, hopefully it comes out of the oven just as nice. Thanks for all the great recipes.
